やぎ汁
材料
・やぎもも肉 骨つき 5kg
・玉ねぎ 3個
・人参 3本
・にんにく 3球
・生姜 500g
・飛び魚出汁 10ℓ
・水 10ℓ
作り方
①やぎもも肉を180℃のオーブンで焼き色がつくまでローストする
②大鍋に全ての材料を入れ3時間〜優しく炊く
③肉を取り出してほぐす、出汁を漉す
④海士の塩で味を整える

Ingredients
5 kg goat's thigh with bone
3 onions
3 carrots
3 garlic cloves
500 g ginger
10 L of soup stock for flying fish
10 liters of water
Method of preparation
1) Roast goat's thigh in the oven at 180℃ until browned.
2) Put all ingredients in a large pot and cook gently for 3 hours.
3) Take out the meat, break it into pieces, and strain the broth.
